A healthy,comforting soup. It is prepared during the summer when fava beans are in season, or with frozen (or canned) fava beans... memories of Grandma will instantly make us feel better.
50 g (1.75 oz) salt pork (or bacon), cut in small cubes
1 leek, sliced fine
250 ml (1 cup) carrots, diced
15 ml (1 tbsp) salted herbs
30 ml (2 tbsp) olive oil
80 ml (1/3 cup) barley
1 l (4 cups) chicken stock
500 ml (2 cups) fava beans
15 ml (1 tbsp) Nutrinor fermented milk
Fresh chopped herbs, to taste

In a medium-sized saucepan, cook the pork over medium heat for 3 minutes, or until well browned.
Add the leeks, carrots, salted herbs and the olive oil, and sweat over medium heat with the salt pork.
Add the barley to the saucepan and continue cooking for another 2 minutes, stirring often with a wooden spoon.
Then add the chicken stock and the fava beans, cover the saucepan and cook over medium-low heat for 25 minutes or until the barley is cooked.
Just before serving, add the fermented milk and fresh chopped herbs, to taste
