Seasonal vegetables and a tasty vinaigrette, made with local products... what more can you ask for?
4-5 large dandelion leaves, or other greens
1 head of your favourite lettuce
6 radishes with leaves
2 or 3 carrots with tops
125 ml (1/2 cup) snow peas
½ English cucumber
125 ml (1/2 cup) Nutrinor fermented milk
15 ml (1 tbsp) Dijon mustard
15 ml (1 tbsp) white wine vinegar
1 French shallot, chopped fine
30 ml (2 tbsp) olive oil
2 ml (1/2 tsp) caraway seeds
Salt and pepper to taste

Wash and cut the lettuce and vegetables to the desired size for your salad.
Toss together in a large salad bowl.

In a bowl, mix the fermented milk, mustard, vinegar and the shallot together, then incorporate the oil.
If you have a mortar and pestle, crush the caraway seeds and add to the vinaigrette. If not, carefully heat them in a pan several minutes to release their aroma.
Season to taste with salt and pepper.
Add the vinaigrette to the salad just before serving.
