They disappear as soon as they are baked! These cookies are moist and perfect for your children (and your big kids too) because they are made with healthy and whole ingredients! Don't feel guilty if you have another cookie ;-)
125 ml (1/2 cup) coconut oil (may be replaced by butter)
180 ml (3/4 cup) brown sugar
5 ml (1 tsp) vanilla extract
1 egg
60 ml (1/4 cup) Nutrinor fermented milk
250 ml (1 cup) all-purpose flour
310 ml (1 ¼ cups) rolled oats
5 ml (1 tsp) baking soda
A pinch of salt
250 ml (1 cup) fresh blueberries
Preheat the oven to 180oC (350oF).
In a bowl, beat the coconut oil and the brown sugar with an electric mixer on medium/high speed for 2 minutes.
Incorporate the egg, fermented milk and vanilla extract.
Beat again until the egg is well mixed in.
In another bowl, mix the flour, rolled oats, baking soda and salt together.
Add the dry ingredients to the coconut oil mixture and mix at low speed until a smooth batter is obtained.
Add the blueberries and mix carefully with a wooden spoon.

Line a cookie sheet with parchment paper and spoon out 12 equal balls, shaping them into rounds evenly spaced apart.
If desired, chill the uncooked cookies on the sheet for 30 minutes.
Transfer to the middle of the oven and bake for 12 to 15 minutes.
Remove from the oven and let rest on the cookie sheet for 2 minutes.
Transfer the cookies to a rack and allow to cool.
